| Honey Glazed Carrots This is a very easy but very elegant side dish - perfect for the holidays
e This recipe is so easy! You will receive raves when you serve this. It is perfect for the Thanksgiving and Christmas table. Ingredients:
1 ) Peel the carrots and cut off the tops and tips. Cut in slices - diagonal looks very lovely - about 1/4 to 1/2 inch thick. 2 ) Melt butter in heavy skillet. Add honey, cumin, salt, and pepper, stirring until smooth. Add carrot slices and stir and cook for a minute or so until the carrots are evenly coated.
3) Add enough water to almost cover the carrots, but not quite.
4) Cook, uncovered, until liquid begins a good steady simmer. 5) Stir. Continue vigorous simmering, uncovered, until the liquid is nearly evaporated. This will be about 14 minutes. Set your timer and check periodically, stirring once or twice. 6) Begin tossing gently and continue cooking until the liquid is reduced to just a very light glaze and the carrots are evenly coated. 7) Serve and enjoy!
